Savory Vegan Pumpkin Soup: Happy World Vegan Day

What You’ll Need

  • 3 tbsp olive oil
  • 2-3 cups roasted Musque De Provence or similar sweet pumpkin
  • 3 carrots
  • 2 roasted sweet potatoes
  • 2-3 cups thai coconut milk
  • 3 cloves garlic
  • 1 white onion
  • 3 cups vegetable soup stock
  • 1 chopped apple
  • 1 sweet pepper
  • 1 spicy pepper
  • 1/4 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tbsp nutmeg
  • 2 tbsp cinnamon
  • 1 tsp salt
  • 1/2 tsp coriander
  • 5 sage leaves plus sprigs for garnish
  • 1 dash cayenne and paprika for garnish
  • 1 pomegranate for garnish

Putting It All Together:

1. In a stock pot sauté all vegetables, herbs and spices.
2. Put sauteed ingredients into blender or Vitamix and puree.
3. In stock pot combine pureed vegetables, soup stock, and coconut milk. Cover and simmer on low for 45 minutes.
4. Serve and garnish with sage, cayenne, paprika and pomegranate seeds.
